Sweet Potato and Peanut Curry

Ingredients:

2 cloves of garlic, finely chopped
1.5cm ginger, finely chopped
3 tblsps Thai red curry paste
1 onion, finely chopped
1 sweet potato, cubed
2 tblsps of peanut butter
1 tin of coconut cream
150g baby spinach
1 lime
handful of peanuts
Oil
(water if required)

Method:

Heat oil and fry garlic, onion and ginger until soft. Stir in curry paste and peanut butter, add sweet potato and coconut cream (plus water for more fluid if required) and let simmer for 30 minutes. Once sweet potato is soft, stir in spinach, lime and peanuts.
Serve with rice, couscous or pasta.
